When you're stressed, your body goes into "fight or flight" mode, a state designed to help you respond to threats.
This state is great when you're facing a lion, but not so great when you're trying to digest your lunch.
In "fight or flight" mode, your body diverts resources away from digestion to prepare for immediate action; because digestion isn't a priority in that state (neither is your immune system!).
It's as simple as that.
The first indication that you're in "fight or flight" mode - rather than "rest and digest" - is a high heart rate and breathing rate.
Slow down, control your breathing, put your body into a state where it can prioritise digestion...
Then, and only then, should you eat.
Quick tip: Adopt the mantra of "When eating only be eating". I.e. no working, no walking, no nothing.
Just eat.
